Another day, another fruit daiquiri. This time, the Kiwi Daiquiri, as requested by my boyfriend. This cocktail is such as glorious green colour, but as with the strawberry daiquiri, it is a pain to strain, however, it is worth it. I’ve tried blitzing the fruits first with a hand blender and I’ve tried adding the lime juice at the blending stage and nothing helps; straining of real fruits sucks, but I will keep doing it to create these kind of visual marvels.
So, here we go…
Ingredients
- 50 ml white rum (I used Bacardi Carta Blanca)
- 25 ml freshly squeezed lime juice
- 25 ml 1:1 sugar syrup
- 1 kiwi
- ice
Equipment
- Metal ice shaker or Boston tin and cheater (needs to be metal so you can tell when it goes super cold, plus it created a rather pleasing tinging sound)
- Muddler (or hand blender if you want to whizz up your fruit)
- Hawthorne strainer
- Fine strainer (or something with a slightly larger mesh if you have it)
- Martini glass to serve
Method
- Cut a slice out of the middle of the kiwi for a garnish
- Scoop the flesh out of the kiwi and chuck in the bottom of the shaker
- Use the muddler to squish up the kiwi
- Add the rest of the ingredients to the shaker
- Add ice to fill 1/2 – 2/3 up the shaker
- Cap it and shake, shake, shake it until the outside of the shaker becomes icy cold, almost uncomfortable to touch
- Strain the cocktail through the hawthrone and fine strainer (this will take time, patience and probably a spoon)
- Garnish and serve
